I Didn’t Disappear, But These Bars Will February 20, 2017

Did you think I’d dropped off the face of the planet?  Okay, so you probably didn’t, but you might have been wondering where I was for the past couple of weeks.  Nothing really exciting, we’ve just been having a busy few weeks with lots of friends and family get-togethers and unfortunately a bit of illness too (just colds, but still not fun).  Still, I’m glad that things have slowed down enough for me to able to share this delicious recipe.

This was one of the desserts I made during the holidays, and let me tell you, it was delicious.  Besides being incredibly easy to whip up, who doesn’t love a dessert that mashes together chocolate and peanut butter?  The only thing I would  say is to make you sure you salt it.  The recipe calls for salted butter, but I didn’t have any to use.  I also used natural peanut butter, which I generally find to be lacking in salt.  I did add salt to my mixture, but it wasn’t quite enough.  Happily this is a no-bake dessert so you can taste it and decide for yourself if it needs more salt. 🙂

No-Bake Peanut Butter Bars (from I Heart Naptime)

1 c. melted, salted butter

2 c. graham cracker crumbs

1/4 c. brown sugar

1 3/4 c. powdered sugar

1 c. peanut butter

1/2 tsp. vanilla

1 11 oz. bag milk chocolate chips

  1. In a medium bowl, stir together everything except the chocolate chips.  Pour into a 9×13 pan.
  2. In another bowl, melt the chocolate chips in the microwave at 50% power for 1-2 minutes.  Stir til smooth and pour over the peanut butter mix.  Refrigerate at least 1 hour before serving.


And it’s as easy (and delicious) as that!  As for what I’ve been into these past few weeks, there’s not a whole lot to share.  We visited the rodeo, and I got to try a deep-fried peanut butter cup (sensing a theme?).  It was good, but very sweet and not quite good enough to justify the $10 price tag.  😛  I’ve also copied down the recipe for a delicious spiced pear upside-down cake that one of my sisters in law brought over a little while back.  It was utterly delicious, and I still think about it sometimes when I’m craving something sweet.  Eventually, I’ll have to make it to share with y’all.  😀
