Well, you know what they say about the best laid plans…. Shortly after my last post (back in April!), we unexpectedly got the chance to move to a better neighborhood. We love our new place, but for the end of April and all of May, I was neck deep in packing, moving, and LOTS of cleaning. We got the basics unpacked pretty quickly, but our new place is quite different in terms of where storage is and how things are laid out. Since we’re starting off fresh, I figured it was a great time to organize and seriously minimize our possessions. That is taking more time than expected, but I’m really loving the results so far. Needless to say I’ve been pretty busy with all that plus all the regular life stuff. But I’m really excited about getting back into blogging.
I don’t have a ton of recipes to share at the moment, but what I do have is one AMAZING recipe that’s perfect for all the beautiful summer peaches available right now. It’s a baked peach recipe with an awesomely crisp and delicious topping. I’ve tried baked peaches before, and I really enjoy them, so I’m not sure why I don’t make them more often. This particular recipe comes from Smitten Kitchen which is pretty synonymous with delicious, so if you’ve got peaches languishing in your fridge, this will be a great way to rescue them.
Almond-Crisped Peaches (from Smitten Kitchen)
1/3 c. almonds
1/4 c. sugar
3 tbsp. cubed butter
1/4 c. rolled oats
1/8 tsp. cinnamon
1 pinch salt
- Preheat the oven to 350 degrees. Halve the peaches, remove the pits, and then place them cut side up in a baking dish.
- In a food processor, grind the almonds and sugar together into a coarse grind. Add in the oats, salt, cinnamon, and butter and pulse just til blended.
- Spoon the topping evenly over the peach halves and press flat. Bake 45-60 minutes or til the topping is browned and crisp and the peach is tender.
