I *think* that I’ve figured out the most reasonable schedule that I can (hopefully) stick to get y’all more recipes and remakes. It looks like posting every other week should give me enough time to have something for you, but it doesn’t push me too hard where I feel like I can’t keep up. Happy all around! 😀
This week we’ve got some long overdue pictures for some recipes that I shared WAY back in the day. The first one up is a Grapefruit Pound Cake. It’s a little different from your regular pound cake since it’s topped with a glaze, but it still delivers a tasty, lightly sweetened, dense cake that I personally enjoy a lot. I did change things up a little this time by using some blood oranges that I had hanging out in the my fruit drawer. The flavor is very similar (you could really swap in any citrus), but I loved the pretty pink that the blood orange gave to the glaze. (By the way, if you spray the junk out of your bundt pan with a flour baking spray, your cake will release like a dream.)
But even better than the pound cake, I finally remembered to take pictures of my favorite cookie of all time!!! Skillet cookies (what you may know as No-Bake Oatmeal Cookies) are my kryptonite. The reason that I’ve failed to take pictures of them (for 8 years!) is that they don’t last very long at all around me. I seriously have NO self-control around them! I think it has to do with the combo of peanut butter and chocolate, plus the perfect melt-in-your-mouth texture. By the way, I’ve also gotten better about making normal person sized cookies. 😉
