Killer Frosting September 27, 2016

This frosting recipe I’m going to share with you tonight is honestly one of the best frostings I’ve ever tasted or made.  It’s a super fluffy, incredibly delicious, and uber-peanut buttery!!!  Several months ago, I was asked to make the cupcakes for a baby shower, and the mom had asked for chocolate cupcakes with peanut butter frosting.  I used a chocolate cake mix, but made this frosting and they were such a hit.  It made a ton too, so I froze what was leftover and used it at a later date to make some over the top brownies.  Honestly, I think this would be good on just about any dessert that you wanted to try it on.  I loved the fluffy, light texture, but I also love that it doesn’t hold back on the taste of peanut butter.  Oh, and did I mention how easy it was to make?

Peanut Butter Frosting (from Sugar and Soul)

1 c. softened butter

1 c. creamy peanut butter

1 tsp. vanilla

3-4 c. confectioner’s sugar

4-5 tbsp. heavy cream

  1. In a large bowl, cream the butter.  Add the vanilla and peanut butter and beat well.
  2. Add the sugar a cup at a time, alternating with the cream.
  3. Beat on medium-high for 2-3 minutes til the frosting is light and fluffy.

Make it.  You won’t be sorry!
