Good For You Chocolate August 23, 2016

Sometimes you just need some chocolate in your life, but what if you’re trying to be a little healthier?  Then this is the recipe for you.  This granola is super easy to make, has just 5 ingredients, and tastes amazing.  I was actually a little skeptical at first, but the more of this I tasted, the more I liked it.  Another plus, is that it’s dairy and gluten-free.  One of my best friends has some food allergies, but she can have this!!  You can use whatever nuts you like, but I decided to go with pecans and almonds since they both go really well with chocolate and coconut.  Honestly though, my favorite part about this was the coconut flakes.  They got super crispy in the oven, and I found them incredibly addictive.

Chocolate Coconut Granola (from Honest Cooking)

3 oz. butter or coconut oil (I went with coconut oil to up the coconut flavor.)

3 tbsp. rice malt syrup (I just used honey.)

1/3 c. cocoa

5 oz. unsweetened coconut flakes (The large ones.)

9 oz. chopped nuts (Again, I used equal parts almonds and pecans.)

  1. Preheat the oven to 300 degrees.  In a small saucepan, melt the butter or coconut oil.  Stir in the syrup and cocoa.
  2. Combine the nuts and coconut in a medium bowl.  Stir in the chocolate mixture til everything is coated.
  3. Spread the granola on a baking tray and bake for 25-30 minutes, stirring every 10 minutes, til the granola is browned and smells good.  (The coconut chips should be crispy.)  (I think mine finished baking in 20 minutes.  It’s hard to tell when things are browned, since they’re covered in cocoa; you really need to trust your nose to tell you when things are ready.)
  4. Let cool and store in an airtight container.
