I don’t know what’s going on in your neck of the woods, but over here we’re having a pretty serious flu season.  Tons of people at church have been down with it, and now my hubby’s got it.  Poor thing, he had a cold a few weeks ago, and now he’s got this.  😛

I had fortunately made a pot of this right before my hubby came down with his cold a few weeks ago, and it was definitely comforting to have on hand.  It was very easy to pull together, and made plenty. (I forgot to count how many bowls we had, but it was probably around 8-10.)

Slow Cooker Salsa Verde Chicken Tortilla Soup (from Carlsbad Cravings)

1 1/4 lb. chicken breast

4 c. chicken stock

2 c. salsa verde

2 14 1/2 oz. cans drained, rinsed cannellini beans

1 15 1/4 oz. can drained, rinsed corn

1 peeled, quartered, sliced zucchini (I didn’t bother to peel mine, and I had no problems with it.)

1 seeded, chopped poblano

1/2 diced onion

4 cloves minced garlic

2 tbsp. lime juice

3 tbsp. honey

1 tbsp. chili powder

1/2 tsp. cumin

1/2 tsp. chipotle powder

1/2 tsp. smoke paprika

1/2 tsp. oregano

1 1/2 tsp. salt

1/4 tsp. pepper

  1. Add all the ingredients to the slow cooker.  Cook on low 6-8 hours or high 3-4 hours.  (If you need it to cook faster, you can chop your chicken into smaller pieces.)  Shred the chicken and return it to the slow cooker for at least 20 minutes.  Serve with tortilla strips or chips.

Is there a particular recipe you prefer to have when you’re sick?  I’m very partial to this Chicken Mulligatawny soup.
