I have had a busy, wonderful week but I wanted to give you a quick treat before the weekend was over. We recently bought some honey graham cereal, so I decided it would be a perfect time to do a riff on s’mores rice krispies treats. They are a quick and delicious way to bring joy to your husband’s lunch (well, it worked on mine).
S’mores Treat (based on those from Rice Krispies)
3 tbsp. butter
10 oz. marshmallows
6 c. honey graham cereal
1/2 – 1 c. chocolate chunks
1. In a large microwave-safe bowl, heat the butter and marshmallow on high for 3 minutes, stirring after 2 minutes. Stir til smooth. (I prefer to make mine on the stove, and I discovered a trick. The marshmallows actually break down better at a higher temperature. I was trying to melt them on medium-low, but medium-high worked much better to get the lumps smoothed out.)
2. Add the cereal and stir til well coated. Sprinkle in the chocolate chunks into the mix and stir them in.
3. Using a buttered spatula (or greased hands), press the mix evenly into a greased 13x9x2 inch pan. Once they’re cool, you can cut them into bars.
